Raw Mushroom Salad

This recipe is perfect for potlucks: it's simple, delicious, and easy to adjust for different sized groups.

  • 1/2 lb fresh mushrooms, thinly sliced, (do not use the presliced boxes as they are not thin enough or fresh enough)
  • 2 teaspoons FRESH lemon juice
  • 1/4 cup thinly sliced scallion greens
  • 3 tablespoons Extra Virgin Olive Oil 
  • 1/2 teaspoon sea salt

In a serving bowl, toss the mushrooms with the lemon juice until the slices are lightly moistened. Then add the scallion greens, olive oil and salt and toss again being careful not to break the slices.Chill the salad before serving it.
