      There seems to be no end to the benefits provided by a diet rich in extra virgin olive oil. You've probably heard about recent studies connecting olive oil with a reduction in heart disease—its high density lipoproteins (HDLs) protect against low density lipoproteins (LDLs), also known as "bad cholesterol". Because of this you'll often hear fats with HDL referred to as "good cholesterol", because they carriy LDLs from tissues and arteries to the liver where they can be eliminated, essentially cleansing the body of this harmful substance and lowering your cholesterol to boot.

      But eating plenty of extra virgin olive oil does much more than help your heart. Did you know researchers now believe it also benefits congnitive function? Also, with vitamins E, A, and K, in addition to iron, calcium, magnesium, and potassium, extra virgin olive oil is good for your eyes, skin, and bones, and boosts your immune system, too. For centuries its been used to soothe the skin, strengthen nails, aid digestion, and ease the effects of alcohol consumption.

    • What's Extra Virgin Olive Oil?

      Extra virgin is the highest grade an olive oil can receive. To put it simply, it is free of defects. The fruit was picked from trees, either mechanically or physically, with extreme care and without deteriorating the quality of the fruit. No chemicals or extreme heat were used during the extraction process.

      For the California Olive Oil Council’s Standards, extra virgin oil must pass a wide range of chemical tests by approved laboratories (including maximum acidity and peroxide value). It must be tasted in a blind sensory evaluation by a trained panel and be determined as free of defects and contain some olive fruitiness. Oils are certified annually between November and April.

      Factors that can affect the fruit/oil and the quality:

      • Weather
      • Picking methods
      • Storage/time between the picking and milling
      • The milling process
      • Exposure to heat, air and light
      • The color of the bottles
      • Time

    • Why California?

      California History

      The olive came to California in the late 18th century, when Spanish missionaries planted olive trees at each of the 21 missions they established between San Diego and Sonoma. By the mid 19th century, there was a thriving olive oil industry in California.

      The industry languished, however, throughout much of the 20th century, until a new generation of health-conscious Americans rediscovered the flavor and benefits of olive oil. Again olive orchards were revived and new groves were planted, signaling a renaissance in the California olive oil industry.

      In the early 21st century, the California olive oil industry has emerged as a vital and diverse factor in the worldwide arena. California oils are produced from a great number of olive varieties, through a wide range of methodologies from labor-intensive traditional hand-harvesting to those that are highly mechanized.

      There is truly a California Extra Virgin Olive Oil for every palate. These oils represent not only the incredible spectrum of flavors available in the olive, but also the agricultural and environmental diversity of California.

      California Harvest

      Of the 350 crops produced in California, olive oil is one of the most dynamic. In late Autumn, after most of California's other crops have been harvested, California's olive oil producers prepare for their harvest and milling season.

      Weather and ripeness determine the exact moment the harvest begins. Different varieties of olives are harvested at varying degress of ripeness to capture a wide array of flavors. Thus, with over 100 olive cultivars in production in a myriad of soil types, climates and microclimates, California Extra Virgin Olive Oils present the consumers with a virtually limitless range of flavor possibilities.

      Freshly harvested olives are rushed from the field to the mill, where they are rinsed in fresh water, and separated from the leaves and stems. Next, the olives are ground into paste and the paste is mixed to encourage the oil to separate from the surrounding vegetable matter and water. Within days, the vibrant elixir can be in the market, ready for use at your table.

    • Using Extra Virgin Olive Oil

      Best when Fresh

      Make sure the label says extra virgin olive oil, and displays a harvest or milling date in addition to the best use date. The harvest date should be within 12 months. Extra virgin oil is “best used” within 18 months. Make sure the oil is purchased well in advance of the best-used date.


      Storage Tips

      Store extra virgin olive oil from light, air and heat. Use it up once it is open. Rancidity is one of the major culprits—an oil that has been exposed to heat or light or is simply old. So what was once a delicious, fruity, pungent extra virgin olive oil may have been stored improperly, been on store or home shelves too long, open for too long, or sitting next to the stove.

    • About the Seal

      When you purchase olive oil with the COOC Seal of Certification, you know you are buying the best extra virgin olive oil made in California.

      Let’s face it: many of the olive oils on the market today claim to be extra virgin, but aren't. To give consumers confidence they are purchasing 100% extra virgin olive oil, the COOC created the COOC Certification Program

      In the certification program, California producers submit their olive oil for sensory evaluation, where a panel of certified tasters conducts a blind tasting, and chemical analysis, rigorous lab testing to confirm acidity levels and other aspects of the oil are on target.

      Only after the oil has passed both tests, does it earn the right to display the COOC seal. Purchasing olive oil with the COOC means you are buying fresh, California grown, 100% extra virgin olive oil, the healthiest and most delicious olive oil on the market today.

    • The Certification Process

      There are three related purposes of the COOC certification program.

      • The first is to provide producers and marketers with a standardized method of grading their 100% California olive oil as extra virgin.
      • The second is to provide consumers with assurance that the oil they purchase is in fact extra virgin.
      • The third is to provide producers and marketers who meet the certification standard with a means of distinguishing their products in the marketplace.

      Overview of the Certification Process

      To gain certification, submit their oil(s) to the COOC Panel of Tasters for sensory evaluationas well as chemical analysis. The chemical analysis determines if the oil contains 0.5 % or less free fatty acids as well as a peroxide value of 20 meq O2/kg or less. An ultra violet absorbency analysis is required for those who produce 100 gallons or more.

      Chemical Analysis Requirements

      The oil has an acidity level, in terms of oleic free fatty acid, of not more than 0.5 % and a peroxide value of 20 meq O2/kg or less Ultra Violet Absorbency for extra virgin olive oil as follows (required for 100 gallons or more):

      • K 270 less than 0.22
      • K 232 less than 2.50
      • Delta K less than 0.01

      The Panel of Tasters

      The Panel of Tasters ascertains defects as well as desirable attributes of extra virgin olive oils. The tasters have undertaken a training and certification program. The team meets at least twice each month for the dual purpose of selecting oils for the COOC program as well as for continual training.

      The award-winning Paso Robles Main Street Association presents the 10th Annual Olive Festival on Saturday, August 17th, 2013 in the Paso Robles Downtown Park. The COOC will be hosting an informational booth at this event. 

      The free event celebrates the olive industry - an emerging local produce - and features olive producers from throughout the country, who will serve tastes of olives, olive oils, tapenades, dipping sauces, olive oil ice cream and edible delights. Professional chefs will offer cooking demonstrations throughout the day on a culinary stage. The festival also features an open cooking contest. Music, special children's entertainment, local wineries and breweries, and free olive oil tasting. Accompanying the Olive Festival is a juried arts + craft show plus a variety of food and festival vendors.

      Substituting extra-virgin olive oil for another oil or butter

      If a recipe calls for another oil, such as canola, used extra-virgin olive oil instead.

      If a recipe calls for butter, substitute extra-virgin olive oil for the butter at three-quarters of the amount. For example, instead of eight ounces of butter, use six ounces of extra-virgin olive oil. This makes sense because oil is one hundred percent fat, butter only about eighty percent.

      A delicate extra-virgin olive oil, with low bitterness and pungency, is always a good choice, especially if it has buttery notes because it will then mimic the flavor of the butter that it is replacing. Other good choices are Ascolano oil, with tropical and stone-fruit flavors, and the citrus oils, particularly orange and lemon.

      Chocolate recipes are special cases. High-quality chocolate can stand up to the bitterness and pungency of a medium or even a robust extra-virgin olive oil. And all the orange oils complement the flavor of chocolate.

      Adapting recipe instructions when substituting extra-virgin olive oil for butter:

      If the butter in the recipe is melted, follow the instructions, substituting the oil for the butter at three-quarters of the amount.

      If the butter is creamed with the sugar, and there is additional liquid (such as milk) in the recipe, follow the recipe instructions substituting the oil for the butter at three-quarters of the amount. (An example is the pound cake in The New American Olive Oil.)

      Some recipes, especially cookies, need even less oil that the usual three-quarters the amount of butter. (The biscotti and madeleines in The New American Olive Oil are examples.)

    • Sautéeing Tips

      Olive oil is a versatile ingredient in the kitchen – wonderful in almost any technique. However, it’s most common use is for sautéing. Sautéing is a cooking method where a small amount of fat, in this case olive oil, is applied to a shallow pan (uncovered) over high heat for a brief amount of time. The contact with heat allows the vegetable or protein to brown or caramelize without changing its texture completely. California extra virgin olive oil has an excellent flavor that transfers to the dish during sautéing without overpowering the natural flavors.

      Prep your ingredients

      Larger pieces of protein or vegetables are usually cut into small pieces, or aromatics like garlic or onion are typically diced or minced. All ingredients must be dry. Meat, fish or vegetables will naturally release moisture so it is important that they start as dry as possible.

      Heat the pan

      All fats have a smoke point – the point at which the fat breaks down, the flavor is compromised, and it begins to produce smoke. Olive oil has a higher smoke point than butter, but it’s lower than seed oils. It is important not to add the olive oil to the pan while it’s heating, or else you run the risk of burning it. The pan should be hot: medium high heat is a good setting for most stoves when using olive oil.

      Add the olive oil to the pan

      Add a small amount of oil enough to lubricate the pans surface, but not to drown the food. In a few moments, it should start shimmering and you can see movement in the surface of the oil. This is the best moment to add your ingredients. If the pan starts smoking, simply remove from heat, pour off burnt oil, wipe the pan and start again. The taste of burnt oil will transfer to your food otherwise.

      Add your ingredients to the pan

      Good practice to not overcrowd your pan. Hopefully your pan is large enough, or work in batches. Overcrowding the ingredients leads to uneven cooking or the ingredients, as they release moisture, will steam each other – which lacks the golden brown crust of a good sauté.

      Movement!

      Sauté literally means “Jump” in French. Tossing and flipping the food ensures that it cooks evenly in the short time, but also it keeps the pan hot.

      Finish the dish

      You can add a sauce, seasoning or glaze at the end of sautéing. If not, remove the pan from heat.

      University Research

      UC Davis’ Olive Oil Center, a university/industry partnership dedicated to promoting the latest research in the manufacture and marketing of olive oil, is the only center of its kind in North America. Their website offers a page summarizing current medical knowledge showing the many health benefits of olive oil, a vital component of a twenty-first-century diet.

      Harvard University’s School of Public Health, in conjunction with Harvard Health Publications, has formulated its own recommendations for the vital ingredients of a healthy diet, the Healthy Eating Plate. Olive oil features first on the list in its category of recommended fats to accompany a diet rich in fruit and vegetables, with a balance of grains and protein.

      Olive oil is the first on the list of foods recommended to patients on the University of California San Francisco’s website, for those who need to add calories and protein to their diet.

      The following provides links to some of the latest medical research showing the benefits of olive oil and its components in the prevention and treatment of a wide range of common medical problems:

      Ageing

      This 2012 study of centenarians and the Mediterranean diet was conducted in the Western part of Sicily, where high numbers of men reach their 100th year (4.5 times the national average in Italy), and where, unusually, the longevity of men is roughly equal to that of women. Their diet, low in saturated fat and rich in olive oil, fruits and vegetables, has been associated with low rates of chronic diseases related to aging, such as coronary failure and cancer.

      Alzheimer’s disease

      Oleocanthal, a key component in extra-virgin olive oil, has been shown to have a beneficial effect on the neurotoxic proteins thought to disrupt nerve cells in Alzheimer’s patients, according to a 2009 laboratory study from Northwestern University.

      Anti-inflammatory properties

      A 2011 study commissioned by the National Institutes of Health and conducted by the Monell Center in Philadelphia identified a receptor sensitive both to ibuprofen, and to oleocanthal, the pungent natural anti-inflammatory agent found in high-quality olive oil.

      Arthritis

      In the treatment of chronic inflammation, the use of non-steroidal drugs like ibuprofen is associated with side-effects, while the traditional Mediterranean diet, rich in olive oil, has been shown to offer some protection against the pathology of chronic diseases by reducing pro-inflammatory mediators. A study from the School of Exercise and Nutrition Sciences, Centre for Physical Activity and Nutrition, at Deakin University in Victoria, Australia, gives an overview of the anti-inflammatory benefits of virgin olive oil, with particular reference to the phenolic compound oleocanthal.

      Atherosclerosis

      A 2012 study at the Mayo Clinic involved a double-blind study of 82 patients in the beginning stages of atherosclerosis, who were administered 30 milliliters of olive oil daily for a period of four months. It suggested that olive oil, whether taken on its own or in combination with catechins such as EGCG, may improve endothelial function, an important surrogate for atherosclerosis, and was also associated with reducing leukocytes.

      Breast cancer

      The website of the University of California at San Francisco’s Helen Diller Comprehensive Cancer Center recommends olive oil as an essential part of a diet that can help to reduce the risk of breast cancer (see page 12).

      Cardiovascular disease           

      A 2001 study from the University of Reading, UK, published in Nutrition, Metabolism and Cardiovascular Diseases, investigated the effects of monounsaturated fatty acids (MUFA) on cardiovascular events soon after eating. The study showed significant improvements in biomarkers for cardiovascular disease in Southern European subjects used to high olive oil diets and on Northern European volunteers who had been transferred to such diets in the short term.

      Cerebrovascular disease (stroke)

      The Three-City Study, published in 2011 after an extensive longitudinal study in three French cities, Bordeaux, Dijon and Montpellier, suggested that olive oil consumption, and high plasma oleic acid as an indirect biological marker of olive oil intake, are associated with a lower incidence of stroke in older subjects.

      Cholesterol

      A 2012 study of 26 healthy volunteers for the Research Center on Aging in Sherbrooke, Canada, explored the effects of 12 weeks’ consumption of extra-virgin olive oil, and suggested that it improves the capacity of high-density lipoproteins (HDL) to mediate cholesterol efflux.

      Colon cancer

      A 2010 study by scientists from the Department of Molecular Biology at the University of Siena, Italy, suggests that a polyphenol present in olive oil attenuates the growth of colon cancer cells, an effect thought to be related to its anti-inflammatory activity.

      Diabetes

      A 2011 study on rats published in the Journal of Agricultural and Food Chemistry provides evidence of the therapeutic potential of the natural substance hydroxytyrosol in the early stages of diabetic neuropathy. Hydroxytyrosol is the major antioxidant polyphenolic compound of olive oil.
