Roasted Pepper Caprese

yield: MAKES 1 SERVING total time: 2.5 HOURS

INGREDIENTS:

  • 3 lbs Mixed Bell Peppers
  •  6 Garlic Cloves ( Lightly Crushed )
  •   cup COOC certified EVOO
  •  ½ tsp Kosher Salt
  •  ½ tsp Black Pepper
  •  12 oz Fresh Mozzarella
  •  4 Basil Leaves
  •  1 tbsp White Balsamic Vinegar

DIRECTIONS

  1. Preheat oven to 325°.
  2. Toss peppers, chiles, garlic, and oil in a Dutch oven or heavy roasting pan.
  3. Season with salt and pepper and toss again to coat.
  4. Cover and roast, tossing occasionally, until peppers are very tender, 2–2½ hours.
  5. Let cool.
